Recipe – Chicken Salad with a Twist

Chicken Salad

No bread needed.

6 ounce package corkscrew macaroni
½ cup Italian dressing
3 tablespoons lemon juice
1 medium onion, chopped
1 cup diced cucumber
salt and pepper to taste
3 cups cooked chicken
1½ cups mayonnaise
1 tablespoon prepared mustard
¾ cup ripe olive wedges
1 cup diced celery

Cook macaroni as directed on the package. Mix cooked chicken and Italian dressing with hot macaroni. Set aside to cool. Blend mayonnaise, lemon juice, mustard, onion, olives, cucumber, celery, and salt and pepper to taste. Add to cooled macaroni mixture. Mix well. Chill 2 hours or longer to blend flavors. Serves 4-8 people.

Recipe – Ginger Molasses Sugar Cookies

4½ cups flour
4 teaspoons ground ginger
2 teaspoons baking soda
¼ teaspoon ground cinnamon
2 eggs, room temperature
white granulated sugar for rolling
1 teaspoon cloves
¼ teaspoon salt
3 sticks of butter, room temperature
2 cups granulated sugar
½ cup molasses

Preheat oven to 350 degrees. In a medium bowl, sift together flour, ginger, cinnamon, cloves, salt and baking soda. Set aside. In a large bowl, or stand mixer fitted with a paddle attachment, beat together butter and sugar until light and fluffy (about 5 minutes). Add eggs one at a time, beating after each addition. Beat in molasses. Using a wooden spoon, stir in the dry mixture slowly. Make 2 inch round balls, roll in sugar and bake for 12-14 minutes.

Recipe – Easy, Elegant Peach Cobbler

peach-cobblerYields 4-8 servings.

1 stick butter or margarine
1 cup white sugar
4 cups peaches, washed, pitted, peeled and sliced
1 cup self-rising flour
1 cup whole milk

Preheat oven to 375 degrees. Put the butter in a 9×6 baking dish and place in oven until melted. In a separate bowl, stir together flour and sugar. Add the milk all at once and stir to blend. Spread the melted butter evenly in the bottom of the baking dish. Pour half of the batter into the baking dish. Arrange prepared peaches on top of the batter. Add the remaining batter, spreading evenly over the peaches. Bake for 45 minutes or until lightly browned.

Note from the cook: This cobbler freezes well. Bake it in aluminum pie tins (the type with plastic lids), cover and wrap in aluminum foil. When ready to serve, remove the lid, thaw slightly and heat in the oven.

Recipe – Herbed Pork

4 to 6 pork chops or steaks
½ cup flour
2 tablespoons parmesan cheese
marinara sauce
1 teaspoon Italian seasoning or oregano, basil and ground fennel
salt and pepper to taste

Cut almost all the fat off the meat. In a bowl, mix flour, parmesan cheese, Italian seasoning, salt and pepper. Put on a plate and press meat firmly into flour mixture. Sauté both sides of park on medium heat until golden brown. Remove from pan and place into a baking dish. Cover with marinara sauce. Bake at 350 degrees until done.

Recipe – Pumpkin Squares

1 cup flour
½ cup quick oats
½ cup brown sugar
½ cup butter

Mix until crumbly and press into the bottom of 9×13 dish. Bake 15 minutes at 350 degrees.

2 cups pumpkin
2 eggs
¾ cup sugar
13 ounces evaporated milk
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon pumpkin pie spice

Mix all ingredients together and pour over crumb layer. Bake for 20 minutes at 350 degrees.

½ cup pecans
½ cup brown sugar
2 tablespoons butter

Mix ingredients together and sprinkle over top of baked filling. Bake another 15 to 20 minutes.

Recipe – Taco Dip

A party favorite!

1 package taco seasoningtaco-dip
16 ounces sour cream
16 ounces cream cheese, softened
tortilla chips

Additional Topping Options:
shredded lettuce
diced tomatoes
green chilies
shredded cheddar cheese
diced onions
taco sauce

Blend cream cheese, sour cream and taco seasoning together in a large bowl until fluffy. Spread evenly at the bottom of a 9×13 baking dish. Layer on additional toppings as desired. Chill for 2 hours. Serve with tortilla chips.
